JJ McDonnell's Weekly Market Report: 1/24/2012; The clock is ticking in Atlantic Canada. The Oysters have been living off their own protein for several months now and will soon become too weak to ship. One way to tell is the opacity of the meats. An Oyster that is feeding heavily will appear meaty and have little or no opacity. As was mentioned toward the beginning of the month, our inventory will begin to hold more West Coast product to make sure you have plenty of options to quench your thirst for tasty oysters...

JJ McDonnell's Weekly Market Report: 1/12/2012; Great Lakes Fish (Walleye, White Bass, Perch): Fishing has slowed down tremendously due to a recent algae bloom. This bloom has spread throughout the western basin of Lake Erie and half of Lake St. Claire. Until the algae is gone finding fish will be difficult.

JJ McDonnell's Weekly Market Report: 12/22/2011; Typically the end of the year brings a huge overseas demand for the highest quality tuna on the market. Japan will pay top dollar for the best fish and because of that most of the product isn't making it to the United States. What does make it over here has an increased dollar amount attached to it...

Arctic Char Fillet- Iceland: Arctic Char is product that is raised through aqua culture in Canada and Iceland. Price is based on a skin on, fillet.

Cobia Fillet - Mexico - LIMITED: Cobia is found worldwide in warm or tropical waters. Currently receiving out of Colombia as a farmed product. Price is based on skin on, fillet.

Market Cod Fillet (Hook & Line) - MASS, USA: Cod is found in both the Atlantic and the Pacific, although there are some differences between the meat. The current price is for Atlantic fresh fillets cut in house, skin on. (make sure you specify fresh cut).

Escolar Fillet - Skin Off - Ecuador: Escolar has extremely high oil content, this characteristic makes it excellent for grilling, coming from Southern Puerto Boliva. This price is for skin on, fillet.

Fluke (Flounder) Fillet - VA: Flounder is caught along the Atlantic coastline from Canada to the Carolinas, JJ McDonnell cuts fillets daily.

Haddock Fillet - Wild - Nantucket: Haddock is caught using long lines in the cold north Atlantic waters along the east coast of the United States and Canada.

Pollock (Saithe) Fillet - USA - LIMITED: The Pollock is a cold water species of fish found off the coast of Northern California and up into the Bering Sea.

Sewansecott Oysters - Hog Island Bay: These delicious salt oysters have the unique taste and texture that have kept people coming back for over 106 years.

Lane Snapper Fillet - Panama: Their color ranges from Silvery-pink to red, with pink and yellow stripes on the side. They're normally 8 to 12 inches long, anything over is considered uncommon. Similar snappers are Mutton, and Mangrove. Smaller fish tend to be found in shallower areas, whereas adult fish are found in deep waters between coral reefs. Lanes are abundant off the coast of Florida, all the way down to the Caribbean. They spawn March through late September, and normally feed on smaller fish and crustaceans. Like any other snapper, it has delicious flaky, tasty, white flesh.

Amberjack Fillet - Carolina: Amberjack is found throughout the Atlantic coast of the United States. We are currently receiving this product out of Bogue Sound, North Carolina. Price is based on a skin on, fillet.

Mahi Mahi Jumbo Fillet - Ecuador: Mahi has a sweet flavor, the meat is lean and has large dense flakes. We source this fish from Central Ecuador. (Manta) Price is based on extra large, skin on, fillets!
