- Treated Escolar Loin from Ecuador is not expected to arrive until April. It's summertime in Ecuador, which means the water is warm ... good for Mahi! Escolar is caught when the water is colder, usually late March or early April. We may see product from Indonesia in February, but it's too soon to speculate on price and availability...

- The clock is ticking in Atlantic Canada. The Oysters have been living off their own protein for several months now and will soon become too weak to ship. One way to tell is the opacity of the meats. An Oyster that is feeding heavily will appear meaty and have little or no opacity. As was mentioned toward the beginning of the month, our inventory will begin to hold more West Coast product to make sure you have plenty of options to quench your thirst for tasty oysters...

- Great Lakes Fish (Walleye, White Bass, Perch): Fishing has slowed down tremendously due to a recent algae bloom. This bloom has spread throughout the western basin of Lake Erie and half of Lake St. Claire. Until the algae is gone finding fish will be difficult.

- Typically the end of the year brings a huge overseas demand for the highest quality tuna on the market. Japan will pay top dollar for the best fish and because of that most of the product isn't making it to the United States. What does make it over here has an increased dollar amount attached to it...

- The Pollock is a cold water species of fish found off the coast of Northern California and up into the Bering Sea.

- These delicious salt oysters have the unique taste and texture that have kept people coming back for over 106 years.
- Lane Snapper Fillet - Panama
- Their color ranges from Silvery-pink to red, with pink and yellow stripes on the side. They're normally 8 to 12 inches long, anything over is considered uncommon. Similar snappers are Mutton, and Mangrove. Smaller fish tend to be found in shallower areas, whereas adult fish are found in deep waters between coral reefs. Lanes are abundant off the coast of Florida, all the way down to the Caribbean. They spawn March through late September, and normally feed on smaller fish and crustaceans. Like any other snapper, it has delicious flaky, tasty, white flesh.
